With spring here and Mother’s Day quickly approaching, I’ve been in the mood for all things floral and bright. From the floral kimonos to nature-inspired children’s books, I’m swooning. One of my favorite ways to infuse this season into our home is with an easy lavender syrup. I love the calming properties of lavender essential oil and am becoming quite obsessed with the flavor. The other day, my obsession spurred me to the stove to make a quick lavender-infused simple syrup (which I, of course, have been using on everything I eat and drink).
Here’s the recipe I used.
- 1 cup water
- 1 cup sugar
- 1/4 cup dried organic lavender
Bring the water and sugar to a simmer over the stove (preferably in a nonreactive saucepan). Once the sugar dissolves, remove from heat and add lavender (either directly into the syrup, or in a large tea bag). Let it steep until the syrup has cooled.
Strain out the lavender and pour the syrup into a mason jar. Keep refrigerated and use within two weeks.

Now for the fun part. Once you have your lavender syrup, you can easily add it to your favorite treats and transform them into something luxurious and elegant. Below are my favorite ways to use it.
- coffee or tea
- bubbly water (or peach-pear la croix. or prosecco, if you’re so inclined.)
- fresh whipped cream (literally the easiest thing ever with one of these bad boys. I’m obsessed with mine.)
- toast + coconut oil
- pancakes or crepes
- plain yogurt + granola
- vanilla ice cream
- fruit salad (I suggest adding grapefruit.)
- goat cheese + crackers
